Why Low to Medium Heat? Xtrema ceramic cookware retains heat far more efficiently than metal pans. This superior heat retention means you can achieve the same or better cooking results using significantly lower temperatures.
When you cook with metal pans, you need high heat because metal quickly loses thermal energy. Ceramic, however, holds heat like a battery—once it's heated, it stays hot. Using high heat with ceramic cookware will cause food to burn and stick, and can even damage the pan over time.
The Golden Rule: Always start with low to medium heat (settings 3-5 on most stovetops). Let the pan preheat for 2-3 minutes. You'll be amazed at how well your food cooks without cranking up the heat.

While Xtrema ceramic has natural non-stick properties, it still requires proper seasoning with healthy fats for optimal performance and food release.
Our #1 recommendation. High smoke point (485°F), rich flavor, excellent for all cooking methods. Creates a beautiful natural seasoning on the ceramic surface.
Highest smoke point (520°F), neutral flavor, perfect for high-heat cooking and daily use. Heart-healthy monounsaturated fats.
Medium-high smoke point (350°F for unrefined, 400°F for refined). Great for low-medium heat cooking, adds subtle flavor.
Lower smoke point (302°F), best for low-heat cooking and finishing. Rich, delicious flavor for eggs, vegetables, and sauces.
DO NOT USE! Sprays contain propellants and additives that create a sticky residue on ceramic surfaces that's nearly impossible to remove. This buildup will cause sticking and discoloration.
Low smoke point (375°F). While healthy for dressings, EVOO can burn easily when cooking, creating a sticky residue. Use refined olive oil instead if you prefer olive flavor.
Very low smoke points. These delicate oils break down quickly when heated, creating unpleasant flavors and potential buildup.
Dry cooking will cause food to stick and may damage the pan's surface. Always use a thin layer of appropriate fat.

For stubborn burnt-on food or staining, Xtrema's scratch-resistant ceramic can handle more aggressive cleaning methods that would destroy other non-stick surfaces.
Baking Soda Paste Method
Mix baking soda with water to create a thick paste. Apply to stained areas, let sit for 15 minutes, then scrub with a sponge or brush. Rinse thoroughly.
Boiling Water Method
Fill pan with water and 2 tablespoons baking soda. Bring to a gentle boil for 5-10 minutes. Burnt residue will loosen and wipe away easily.

Remember: Xtrema ceramic is incredibly durable when treated properly. Thermal shock is preventable—simply allow gradual temperature changes and never shock the ceramic with extreme temperature differences.
