If you treat Xtrema ceramic cookware like traditional metal pans, you may damage your food or the pan. Ceramic retains and distributes heat differently than metal—follow these guidelines for optimal performance and longevity.

The "Low & Slow" Philosophy

Why Low to Medium Heat? Xtrema ceramic cookware retains heat far more efficiently than metal pans. This superior heat retention means you can achieve the same or better cooking results using significantly lower temperatures.

When you cook with metal pans, you need high heat because metal quickly loses thermal energy. Ceramic, however, holds heat like a battery—once it's heated, it stays hot. Using high heat with ceramic cookware will cause food to burn and stick, and can even damage the pan over time.

The Golden Rule: Always start with low to medium heat (settings 3-5 on most stovetops). Let the pan preheat for 2-3 minutes. You'll be amazed at how well your food cooks without cranking up the heat.

Essential Rule

The Oil Rule: Never Dry Cook

While Xtrema ceramic has natural non-stick properties, it still requires proper seasoning with healthy fats for optimal performance and food release.

✓ Best Oils to Use

  • Ghee (Clarified Butter)

    Our #1 recommendation. High smoke point (485°F), rich flavor, excellent for all cooking methods. Creates a beautiful natural seasoning on the ceramic surface.

  • Avocado Oil

    Highest smoke point (520°F), neutral flavor, perfect for high-heat cooking and daily use. Heart-healthy monounsaturated fats.

  • Coconut Oil

    Medium-high smoke point (350°F for unrefined, 400°F for refined). Great for low-medium heat cooking, adds subtle flavor.

  • Grass-Fed Butter

    Lower smoke point (302°F), best for low-heat cooking and finishing. Rich, delicious flavor for eggs, vegetables, and sauces.

✗ Avoid These

  • Cooking Sprays (PAM, etc.)

    DO NOT USE! Sprays contain propellants and additives that create a sticky residue on ceramic surfaces that's nearly impossible to remove. This buildup will cause sticking and discoloration.

  • Extra Virgin Olive Oil (EVOO)

    Low smoke point (375°F). While healthy for dressings, EVOO can burn easily when cooking, creating a sticky residue. Use refined olive oil instead if you prefer olive flavor.

  • Flaxseed or Unrefined Oils

    Very low smoke points. These delicate oils break down quickly when heated, creating unpleasant flavors and potential buildup.

  • No Oil at All

    Dry cooking will cause food to stick and may damage the pan's surface. Always use a thin layer of appropriate fat.

Daily Cleaning

For everyday cleanup after cooking, Xtrema ceramic cookware is incredibly easy to maintain. The non-porous ceramic surface doesn't hold onto food particles or odors like other materials.

Step 1: Cool Down

Let the pan cool to room temperature. Never put a hot pan in cold water (see thermal shock section below).

Step 2: Warm Soapy Water

Wash with warm water and mild dish soap using a soft sponge or cloth. The smooth ceramic surface releases food easily.

Step 3: Rinse & Dry

Rinse thoroughly and dry with a soft towel. Your Xtrema cookware is ready for next use or storage.

Deep Cleaning

For stubborn burnt-on food or staining, Xtrema's scratch-resistant ceramic can handle more aggressive cleaning methods that would destroy other non-stick surfaces.

Baking Soda Paste Method

Mix baking soda with water to create a thick paste. Apply to stained areas, let sit for 15 minutes, then scrub with a sponge or brush. Rinse thoroughly.

Boiling Water Method

Fill pan with water and 2 tablespoons baking soda. Bring to a gentle boil for 5-10 minutes. Burnt residue will loosen and wipe away easily.

Steel Wool is Safe!

Yes, you read that right. Unlike Teflon or other coated pans, Xtrema ceramic is so durable that you can use steel wool to remove stubborn stains without damaging the surface. The ceramic is harder than the steel.

Critical Safety Information: Avoiding Thermal Shock

Thermal shock occurs when ceramic experiences a sudden, extreme temperature change. This can cause your Xtrema cookware to crack or break. Following these guidelines will ensure your cookware lasts for generations.

DO NOT Do These Things:

  • Never put a hot pan in cold water or under cold running water. This is the #1 cause of thermal shock damage.
  • Never place frozen food directly in a hot pan. Let frozen items thaw first, or add them to a cold pan and heat gradually.
  • Never place a cold pan directly on high heat.Always preheat gradually starting with low heat.
  • Never put a hot pan on a cold surface like a granite countertop or cold trivet. Use a room-temperature trivet or cutting board.

Safe Temperature Transition Guidelines

  • After cooking: Turn off heat and let the pan cool naturally for at least 10-15 minutes before washing.
  • From fridge to stove: Let refrigerated food come to room temperature before adding to a preheated pan, or start with a cold pan.
  • Preheating: Start with low heat and gradually increase over 2-3 minutes rather than starting with high heat.
  • Dishwasher use: While dishwasher-safe, ensure the pan is completely cool before placing in dishwasher.

Remember: Xtrema ceramic is incredibly durable when treated properly. Thermal shock is preventable—simply allow gradual temperature changes and never shock the ceramic with extreme temperature differences.

Additional Care Tips for Longevity

Storage

Stack carefully with pan protectors or cloth between pieces to prevent chipping. Store with lids off to allow air circulation.

Utensils

While ceramic is scratch-resistant, use wooden, silicone, or nylon utensils for best results. Avoid sharp metal edges that could chip the rim.

Seasoning

Unlike cast iron, Xtrema doesn't require traditional seasoning. However, regular use with healthy fats naturally improves the non-stick performance over time.

Induction Cooking

Xtrema works on induction cooktops thanks to the integrated stainless steel disc. Start with the lowest setting and adjust as needed—induction heats very efficiently.

Oven Use

Xtrema is oven-safe up to 500°F (260°C). Perfect for stovetop-to-oven recipes. Remember to preheat the oven with the pan inside to avoid thermal shock.

Handling Chips

Small chips on the rim or exterior won't affect performance or safety. The entire pan is pure ceramic throughout, so there's no coating to flake off into food.
